Mother Haney's Veggie Stir-Fry Corn Tacos

Cutting board
Skillet

DIRECTIONS:
slice carrots vertical (place in skillet with small amount of water)
Turn heat between low and medium
Dice onion into smaller pieces and add to skillet
Then cut kale crosswise in narrow slices-add to skillet
Add Several squirts of Bragg's Liquid Aminos (a natural soy sauce-all purpose seasoning)
Add to the skillet the following while this is cooking:

Sprinkle some:
Crushed Red Pepper Flakes
Italian seasoning
Dill seasoning
A little Cayenne pepper
Tony Chachere's seasoning
Grind Coarse Black Pepper
A dash of Agave (a healthy sweetener)

Then add zucchinni cut in small pieces and also broccolli
(add these 2 ingredients after carrots and onions are starting to soften)

VEGETABLE INGREDIENTS:
1 or 2 carrots
1 kale leaf
1 zuchini
brocolli florets
1 yellow onion

When vegetables are about done, then add splash of Olive Oil and spinach and cook until wilted and well mixed.


Heat another small skillet and OIL CORN TORTILLAS BY HAND JUST SLIGHTLY
Heat on one side and turn on other side and when soft, fold and cook just enough to give form, but it is not fried or hard. It is soft

Place warm tortillas on plate and spoon vegetables into the middle of each one. Then sprinkle with fresh grated parmesian cheese and add fresh sliced avocados. (you can also add fresh diced tomatoes)

Eat with chips and homemade salsa. Delicious!

Chicken with Sun-Dried Tomato Orzo

Need
Cutting board
blender/food processor
small bowl
good cutting knife
skillet

4 boneless, skinless chicken breast
1/2 onion sliced into small pieces
1/2 tsp of pepper
1/2 tsp of salt
Garlic powder
1 zuchinni, sliced (quarter inch pieces)
1/2 cup freshly grated Parmesan cheese (there is alternative vegan parmesan cheese that is really good at Whole Foods and other Health food stores that tastes good too)
8 oz of whole wheat orz (you can substitute it for rice or soy pasta if you are allergic to wheat)
1/2 cup chopped sun-dried tomatoes, (dried, not oil packed)
1 tomato, diced
1-2 garlic cloves, minced
2 Tbs of freshly choppd marjoram
1 Tbs of red-wine vinegar

Directions

Boil orzo in a large Saucepan and add 1tsp of olive oil as it begans to boil. Usually 8 minutes is all it takes to boil the Orzo. Drain/rinse

While Orzo is cooking

blend together
1/4 cup sun-dried tomatoes
1 tomato, diced
1-2 cloves of garlic freshly minced
2 teaspoons of fresh chopped marjoram
1 Tbs of Red-wine Vinegar
2 tablespoons of olive oil
Blend in blender/food processor but not pureed, leave it to be somewhat of a chunky texture

Add olive oil into the skillet and add the chicken breast in there with a dab of salt/pepper/garlic power and cook for 2-3 minutes then add in onion and zuchini and cook another 5-6 minutes. Then transfer to a plate and slice chicken into thin strips and cover well.
Pour Tomato mixture into skillet and then take about 1/2 cup of the mixture and place in small bowl. Add to the skillet the orzo, Parmesan chz and a dash of red pepper flakes and stir on high for 2-3 minutes (cheese should be melted)
Prepare plates by adding mixture first then topping with chicken mixture and then each plate topped with 2 Tbs of freshly grated Parmesan cheese and a dash of Marjoram

Steph's Zesty Salad

Get out the cutting board
and a good-sized salad type bowl

Lettuce (your choice, we use organic baby romaine)

Red Onion (slice "very thin" slices)

Cherry tomatoes (we cut them in half)

Avacado (I usually only need one since its just for 2 people)
(peel off hard layer, remove seed and cut into nice med-size chunks or you can go thin with it-your choice)

Cheese (I prefer goat cheese, my favorite..but you can use feta, fresh grated parm and or there is some good "rice" cheese that you can use if you are a vegan or cannot tolerate too much dairy)

sliced almonds/walnuts/pecans (optional) (Preheat oven to 350, then spread nuts onto a ungreased pan. cook for 10-15 minutes, stirring occasionally till toasted.) (Now if you want to add a sweet/salty flavor, put the nuts in the pan and then drizzle lightly with some olive oil and then sprinkle a small amount of sugar and salt) (You can always use Palm sugar which is healthier and helps keep the glycemic levels low (comes from coconut) or stevia, Agave-use whichever sweetner you prefer)

Dried cranberries (totally optional) (I dont add these often but sometimes like to change it up)

Croutons (Optional)

Put everything into the Salad bowl and mix together. Then pour some of my Homemade Salad Dressing in with the mix and serve)

It is zesty and filling

Oven baked Regular and Sweet Potato Fries

Turn oven on 375
Pull out a good sized bowl
a cutting board
a good sized baking pan


Olive oil (about a 1/3 cup)

Pepper (to your liking)

Salt (to your liking)

garlic powder (optional)

Slap your mama seasoning (optional but adds major zest)

4 potatoes (You may need more, all depending on how many people are eating)
peel off the skin and then cut into long strips like french fries
2 sweet potatoes (slice just like you do the other)

Throw the sliced potatoes into the olive oil mix and use your hands (wash your hands before:-)

Make sure the mixture gets on all of the potatoes
Then place the potatoes onto the baking pan and make sure they are in a single roll and not piled on top of each other. (so you can get the french fry effect)

cook for 18 minutes but check after 12 minutes just to make sure they are cooking to your liking.

I also make a homemade bar-b-que sauce to dip these in

Children will love these. When my stepdaughter is with us she always wants me to make these. Again another Delicio (delicious) recipe

You will need a cutting board for this


2 Avacados (peel off the hard layer and cut up the avacados into medium sized pieces and throw in a good sized bowl)
Cherry Tomatoes (He just begins slicing them and throws them into the mix)
Red onion (gage how much you want) (slice into tiny pieces and throw into the mix)
Garlic (1 clove, he minces it well and throws it into the mix)
Jalapeno (optional) He uses fresh and cuts into small pieces but never ever uses the middle part where the seeds are (seeds are the out of control spicy part) it can turn your mouth on fire and then you can't taste your food
salt (use at your discretion) (if you cannot have salt use Mrs. Dash which is salt-free something mama Haney has always used)
pepper, garlic powder
squeeze 1/2 a lime into the mix
You can also toss in a dash of cayenne pepper and give it an extra kick (I do this if I make it:-)

get a fork and mash and mix well

This is a snack Asbel and I love to have with White Corn Tortilla Chips

Mama (Joy Haney) has been a lover of Avacados since she was a little girl. She has implemented it into her diet and our families diet it seems forever. She will often eat it like you would eat an apple.
She has always said it is high in Vit E, high in potassium, a mineral which helps regulate blood pressure. It also has oleic acid which helps fight cancer. It helps lower cholesterol, and is great for the heart.

Stephenies Homemade Salad Dressing

You will need a blender or a food processor

Take 1 to 2 garlic cloves (You can chop up yourself or throw the whole thing into the mix)(note: if you are not a garlic lover then go ahead and eliminate the garlic and it will still be Delicio "Delicious")

Olive oil (I toss some in and don't measure -it all depends on how much you want to make)

Balsamic Vinegar ( I also toss this in, it is strong so don't go crazy with it)

Then squeeze half of a lemon into the mix (if you like lots of lemon squeeze in the entire lemon)

Season with Greek seasonings and herbs

I also add a pinch of salt and pepper

Blend

It really is phenom, phenom and phenom!
