Get out the cutting board
and a good-sized salad type bowl
Lettuce (your choice, we use organic baby romaine)
Red Onion (slice "very thin" slices)
Cherry tomatoes (we cut them in half)
Avacado (I usually only need one since its just for 2 people)
(peel off hard layer, remove seed and cut into nice med-size chunks or you can go thin with it-your choice)
Cheese (I prefer goat cheese, my favorite..but you can use feta, fresh grated parm and or there is some good "rice" cheese that you can use if you are a vegan or cannot tolerate too much dairy)
sliced almonds/walnuts/pecans (optional) (Preheat oven to 350, then spread nuts onto a ungreased pan. cook for 10-15 minutes, stirring occasionally till toasted.) (Now if you want to add a sweet/salty flavor, put the nuts in the pan and then drizzle lightly with some olive oil and then sprinkle a small amount of sugar and salt) (You can always use Palm sugar which is healthier and helps keep the glycemic levels low (comes from coconut) or stevia, Agave-use whichever sweetner you prefer)
Dried cranberries (totally optional) (I dont add these often but sometimes like to change it up)
Croutons (Optional)
Put everything into the Salad bowl and mix together. Then pour some of my Homemade Salad Dressing in with the mix and serve)
It is zesty and filling
